Jumbo Pretties

Hello Sweet Readers~ I hope you had a fabulous weekend! I cannot believe it is already June!

Here are a couple jumbo cupcakes I made for an order. They were filled with delightful buttercream and I topped them with more buttercream and some more test roses. I actually like making the roses; however, they are very particular about what kind of frosting they want. They seem to do best with the stiffer frosting that doesn't taste all that great. These were made with a very yummy buttercream, and I have to say, I just like the thought of eating that better than "decorator" frosting. I also did some with Italian meringue buttercream and they came out pretty good. That stuff is the bomb in terms of taste. Well, I'll keep trying (and eating all my failures :)

i love the way your cupcakes look. I like how the don't rise above the liner much. do you just fill them up 50% of the way to get them to do that?

I've been meaning to ask you - how is that new beater blade working?

Kristin, it really depends on the recipe. I do try not to fill more than 3/4 full, but some recipes rise more than others. I don't think I ever only do 1/2 full though.

I like the beater blade better than the side swipe. They cost about the same, but contrary to the review in "Cooks Illustrated", I actually prefer the beater blade over the other. They are both better than the one that comes with the KitchenAid, however. They are much faster and you never have to scrape the side of the bowl! I have the big KitchenAid (Professional), so I'm not sure if that makes a difference...

BTW, I want to visit your store within the store next time I'm in SoCal and perhaps we can meet! :)

I am on my second beater blade. The first one I had broke! I have a artisan but I really need the 6 qt professional.
